No-Bake Energy Bites (Powerballs)

No-Bake Energy Bites (Powerballs)</p>
<p>1 cup dry oatmeal (not instant)<br />
2/3 cup toasted coconut flakes<br />
½ cup natural peanut butter or almond butter<br />
½ cup ground flax seed<br />
1/3 cup raw honey or pure maple syrup<br />
½ cup dark chocolate chips<br />
1 Tbs. chia seeds (optional) or substitute with sesame seeds.<br />
1 tsp. pure vanilla extract</p>
<p>Stir all ingredients in a medium bowl until thoroughly mixed.<br />
Cover and chill in the refrigerator for about ½ hour.<br />
Once Chilled, roll into 1” balls.<br />
Store in an airtight container & keep refrigerated for up to one week. </p>
